Tofu Uttapam

Ingredients:

  • Tofu – 100gms.
  • Mayonnaise – 20gms (2 Tbsp).
  • Unflavoured soy milk – 100ml.
  • Cheese – 2 cubes.
  • Spinach – 3 – 4 leaves.
  • Mushrooms – 6 – 7 in no.
  • Butter – 2tsp.
  • Eno – ½ tsp.
  • Salt & pepper – according to taste.

Method:

  • For batter: Blenderize tofu, mayo & soy milk to make a smooth batter.
  • For filling: Sauté mushrooms & spinach in butter.
  • For Omelet : Add salt to the batter, add eno & mix the batter well in clock wise direction & pour on a greased tava with butter.
  • Add grated cheese on the omelet, add sauted veggies.
  • Cook until golden brown and serve hot.
